Happenings

Blogging has been tough to get to these past couple weeks. Time just does not slow down. Here are some things we have been up to:


Jessica and I got rollerblades! We got tired of following Bo and Drew in the car while they freeborded so now we are going to rollerblade while they do their thing :) I'm still trying to get it all down but it's a good work out!
A few weeks ago we got this amazing deal on KSL Deals. It came with unlimited admission to Raging Waters, RSL tickets, Grizzlies tickets, Blaze tickets and more! So we took advantage of our RSL tickets last week and went to a game!

Last week was Bo's spring break so we took a couple days off, relaxed and Bo's work got a presidential sweet at a Flash game so we went and got treated to dinner and everyone got to listen to Bo scream til his throat hurt at all the other team's player haha


This was the BEST part of the break! We got to meet our new baby niece Drea! She was born last Friday.She is gorgeous and perfect! She is a little snuggle bunny and loves to be held tight and close! I wish I could spend days with her.



I of course had to bring my rollerblades with me on our visit to show Marli and Dylan. Marli had to try them out so Papa and Grandma bought them some of their own. Aren't they so cute?! So when we weren't snuggling Baby Drea, we were outside rollerblading, skateboarding and scootering! It was such a nice break!
Isn't she so pretty?!


On another note! We got Apple TV!!! Yay! Bo has been wanting it for FOREVER! Thanks to my fabulous father, we are now proud owners of one! Thanks Dad :)

Cafe Rio Recipes

Tonight we had homemade Cafe Rio pork salads with our friends. They were fabulous! I just thought I'd share a few of the recipes!

Cafe Rio Pulled Pork

5-7 lbs pork tender loin
2 cans of Coke or 1 1/2
1 tsp Cumin
2 Cups brown sugar
1 big jar salsa (preferably La Victoria)

Place pork in crock pot. Cover with water about an inch over pork. Cook on low overnight.
Mix Coke, cumin, brown sugar and salsa. Drain the water from the crock pot and shred the pork. Pour the Coke mixture over pork and cook for another 3-4 hours.
I had Dr. Pepper already so instead of Coke I used that. It worked out great!


Tomatillo Dressing

1 pkg buttermilk rance
1 Cup buttermilk
1 Cup mayo
2 jalapenos, chopped fine
2 tomatillos, chopped fine
little lemon
little tabasco
little garlic
1/2 bunch of cilantro, chopped fine

Mix everything together. Let set for 1-2 hours.


Cilantro Lime Rice

4 Cups water
2 Cups white rice
4 tsp chicken bullion
2 cloves garlic
1/2 onion, chopped
1 large lime
1/2 bunch cilantro, chopped fine

Chop onion, garlic and cilantro. In a 4 Cup measurer squeeze lime so that all juice is extracted. (I couldn't find a large lime so I used 1 1/2 small ones) Fill container with water until it equals 4 cups then pour into a sauce pan (only use 4 cups). Add chicken bullion and bring to boil. When boiling, add rice, garlic, onion and cilantro. Cover and cook for 25 minutes or as long as instructed on the rice package.



Mac Mania & Flash

I guess you could say it's been a bit of Mac Mania around here considering with this post and my last post, there are 3 pics of Macs! Yet another Mac has been brought into the family, this time by Bo's dad. On Friday Bo's fam came out and we got his dad all set up on his new MacBook Pro. We are so excited! Now we get calls at random times of the day from Bo's dad from FaceTime :)

This picture and these guys are what got us court side seats at the Flash game last night ;) We seriously had so much fun! Drew just happened to get 6 free tickets to the game last night and it was well worth it for a good time! Drew and Bo were dancing, cheering and yelling so amazingly that we got moved over to court side seats right next to the other team so they could do all the yelling and cheering they wanted. Drew did a great job and getting into a few of the other team's heads. Some of them actually talked to him and glanced at him all confused like!
Didn't know something free could be so fun!


Oh yeah, and we won!

We topped off the night with some yummy ice cream and fries from the Malt Shoppe!

Just another update...


Bo and I have been pretty lucky this month! We've been able to spend lots of time with our family! A couple weekends ago my parents and my grandma and Donald came out for my cousin's soccer game. This girl does rock at soccer! She is training with the high school team and there are plenty of coaches with their eye on her! The night before the game we all went the the famous Guru's. After the game we went shopping- not just normal shopping but shopping for one of the best things ever! A new MacBook Pro for my mom. I have been waiting for this day for a long time! I think I was more excited for her than she was!

Last weekend was so bitter sweet. Drew and Jessica came to Vernal with us for Heather's farewell. We had a blast! Don't think I've had that much fun in Vernal in a while ;) Right after we unloaded the car, Bo and Drew were on their freebords in the driveway. So of course Jessica and I joined in. And by joining in I mean we drove in the car very very slowly behind them with the lights on so they wouldn't get hit by other cars. This lasted for about a good 2 hours until poor Drew had the first crash of the night :(



Heather did such a great job at her farewell! It was all so perfect! Her journey up to now has been a long one. But seeing how far she has come has been the best part. I think that's what makes it so perfect! If anyone wants a great example of patients, she is the one to look to. She is an amazing missionary and I am so excited for the experiences to come for her. I know that her, her family and those who come into her life will be very blessed.
Can't wait to get our first letter or email from her!


We got to go shopping again on Monday! Bo got a new baby just like my mom! We now have another Mac in the house! I'm so excited he got it! It is perfect for school for him! We both love it already!
