Cafe Rio Recipes

Tonight we had homemade Cafe Rio pork salads with our friends. They were fabulous! I just thought I'd share a few of the recipes!

Cafe Rio Pulled Pork

5-7 lbs pork tender loin
2 cans of Coke or 1 1/2
1 tsp Cumin
2 Cups brown sugar
1 big jar salsa (preferably La Victoria)

Place pork in crock pot. Cover with water about an inch over pork. Cook on low overnight.
Mix Coke, cumin, brown sugar and salsa. Drain the water from the crock pot and shred the pork. Pour the Coke mixture over pork and cook for another 3-4 hours.
I had Dr. Pepper already so instead of Coke I used that. It worked out great!


Tomatillo Dressing

1 pkg buttermilk rance
1 Cup buttermilk
1 Cup mayo
2 jalapenos, chopped fine
2 tomatillos, chopped fine
little lemon
little tabasco
little garlic
1/2 bunch of cilantro, chopped fine

Mix everything together. Let set for 1-2 hours.


Cilantro Lime Rice

4 Cups water
2 Cups white rice
4 tsp chicken bullion
2 cloves garlic
1/2 onion, chopped
1 large lime
1/2 bunch cilantro, chopped fine

Chop onion, garlic and cilantro. In a 4 Cup measurer squeeze lime so that all juice is extracted. (I couldn't find a large lime so I used 1 1/2 small ones) Fill container with water until it equals 4 cups then pour into a sauce pan (only use 4 cups). Add chicken bullion and bring to boil. When boiling, add rice, garlic, onion and cilantro. Cover and cook for 25 minutes or as long as instructed on the rice package.
